Baked Nut-Free Muesli Bars

Ingredients

  • 125g unsalted butter, melted to a liquid
  • ½ cup maple syrup
  • Pinch of cinnamon powder
  • Pinch of sea salt
  • 1 cup rolled oats
  • 1 cup puffed rice or rice bubbles
  • ⅓ cup spelt flour
  • 2 tablespoons chia seeds
  • ¼ cup pumpkin seeds
  • 8 dried apricots, finely diced, or sub this for another dried fruit
  • ¼ cup dried cranberries, raisins or sultanas
  • Optional: Add 2 tablespoons of Raw or Roasted Carob Powder for an extra little treat

To Serve:
Carob For Cooking buttons or bar, melted down in a bain marie method

Method

  1. Preheat an oven to 160 degrees, bake.
  2. Line a 28cm x 20cm rectangle baking tin with parchment paper, allowing some overhang.
  3. In a medium sized mixing bowl combine all of the ingredients until well combined.
  4. Transfer to the baking tin and press down firmly in an even layer.
  5. Bake the bars in the oven for 30 minutes or until golden in colour.
  6. Allow the bars to cool in the tin for 30 minutes before lifting out carefully using the handles of the parchment paper.
  7. Allow the bars to cool completely before slicing them into 8 even sized slices – or 16x squares if you prefer.
  8. Drizzle the melted Carob For Cooking over each slice, or simply serve in a bowl as a dipping sauce. 

Store these bars in an airtight container in a dry place or in the fridge for up to 4 days. They can also be kept in the freezer for up to 1 month.
